Milanese Veal escalopes is one of the most famous dishes of Italian traditional cuisine. Crunchy, mouthwatering and extremely easy to make this recipe is a must-haves in Italian cooking to satisfy the whole family.

 

Ingredients

  • 6 veal escalopes
  • 100g grated Parmesan cheese
  • 200g bread crumbs
  • 150g plain white flour
  • 2 large eggs, beaten
  • Fine sea salt
  • Butter or extra virgin olive oil to fry

Method

Place the beaten eggs and the breadcrumbs in 2 large bowls. Mix together the parmesan and breadcrumbs, dip the veal in flour, then into the beaten egg. Press the escalopes into the breadcrumbs, turning to cover both sides and pressing down to make sure the crumbs adhere. In a wide-based pan, heat enough butter to cover the base. Fry the escalopes until golden brown. Turn the escalopes once and continue frying until cooked through, about 2 minutes per side.
Serve with fresh lemon and green salad.
Don’t put salt on the meat or in the coating, season with Sea salt at the end. ENJOY!
