- 3 eggs
- 175gr sugar
- 100 gr butter
- 125gr lemon curd yogurt
- 3 spoons lemon curd
- 1 lemon zest
- 160gr plain flour or 00
- 1 tsp baking powder
Preheat oven to 160C and grease with butter and flour a loaf tin.
In a medium bowl combine flour, baking powder, lemon zest, sugar and put aside.
Whisk eggs and sugar until fluffy, then add the softened butter, 1 spoon of lemon curd, yogurt and lemon juice and mix for 2/3 minutes. Gently add the flour mixture.
Quickly mix with an electric whisk until the batter just comes together.
Place the lemon loaf batter in the prepared loaf tin and place other 3/4 tea spoons of lemon curd on top, use a butter knife to slightly swirl the curd.
Bake for 40/45 minutes or until a toothpick inserted in the center of the cake comes out clean. ENJOY!
