• 450 plain flour, plus extra for dusting

  • 100g softened butter

  • 40g caster sugar

  • 2 eggs, beaten

  • 2 teaspoon baking powder

  • 2/3 tablespoon milk

  • a pinch of salt

  • 1 orange zest or handful sultanas or pistachios (optional)

Cream the softened butter cubes in a bowl and beat in the sugar and eggs. Mix together flour, baking powder, orange zest and salt and add to the butter mixture. Add enough milk to make a soft dough then shape in a ball and leave for 1hour. Preheat the oven to 180c
Roll out the dough to 2cm and make rounds with a cookie cutter. Place on a baking sheet, brush the top with a beaten egg and bake for 15 minutes or until well risen and golden. Eat just warm with jam and clotted cream.
