Peel the bananas, mash them in a bowl and drizzle them with a few drops of lemon juice.
In a separate bowl, whisk the soft butter with the sugar and honey.
Then add the eggs a pinch of salt and continue whipping. Use an electric mixer to whisk them until pale and slightly increased in volume.
Incorporate the banana puree, the flour, the cinnamon and the baking powder.
Finally add the nuts and mix the mixture until it is homogeneous.
Line a loaf mold with parchment paper and pour the dough into it. Cut two slices of as thin as possible and then grease with apricot jam or spray jelly, so they keep a nice and shiny colour.
Bake the banana bread at 180 ° and cook for about 45/50 minutes. Once ready, let it cool and serve.
