Sweet and Sour Peppers are a delicious side dish to enjoy hot or cold, with cooked meat or fish or as a simple and tasty bruschetta topping.
- 6 peppers, de-seeded and cut into thin strips
- 1 garlic clove, crushed.
- 1 large red onion
- 8 tbsp extra virgin olive oil
- 2 tbsp cappers
- 1 tbsp caster sugar
- 3 tbsp Balsamic vinegar
- 1 handful of black olives, unpitted
- 2 tbsp breadcrumbs
In a large pan add peppers, garlic, onion and olive oil.
Cook on a low heat, stirring for about 20minutes, or until the peppers are very tender and the liquid is reduced. Add the cappers and olives.
In the meanwhile make the “agrodolce”: Combine vinegar and sugar in a small saucepan and reduce by half over medium-high heat for 1 or 2 minutes. Pour the “agrodolce” vinegar over the vegetable mixture and toss to coat. Add the breadcrumbs and stir for 1 or 2 minutes. Serve hot or cold. ENJOY!
