Ingredients for 4 people

  • 350g Basmati rice

  • 3 peppers

  • 2 onions

  • 1 small courgette

  • ½ cabbage

  • 250 g chicken

  • 2 tbsp soy sauce

  • Salt & pepper, extra virgin olive oil

Method

Wash the vegetable and cut them in small cubes. Pour some oil in a big pan and stir fry the vegetables on a low heat for about 30 min or until soft but still slightly crunchy. Aside boil the Basmati rice for approx. 15/20min. Cut the chicken in small cubes and in another pan add extra virgin olive oil, a pinch of salt, 2 table spoon of soy sauce and the chicken. Once cooked thoroughly but still crunchy add the chicken and its sauce into the vegetable pan, stir and cook for about 5min. Serve the chicken and vegetables with rice. ENJOY!
