The best tomato sauce has just 3 ingredients – fresh tomatoes, onion and basil

I love the scent of tomato sauce, it releases all the essence of summer! Every time I prepare fresh sauce with basil and onion it is a feast, a very simple preparation but full of taste, the scent of Sicily. I grew up with these spectacular perfumes!l!!!



  • 1,5 kg fresh tomatoes, roughly chopped

  • 1 or 2 white onions, roughly chopped 

  • I bunch of basil

  • Salt and pepper

  • 3 tbsp extra virgin olive oil


Wash the basil, onions and tomatoes, dry them well, put everything in a casserole.

Turn on a low flame, season with salt and pepper and add 3 tbsp of oil.

Stir occasionally and leave to cook for about 1 hour, if you see too much liquid continue cooking until almost all the liquid has evaporated and the tomatoes are reduced to a thick, jam-like consistency. Stir frequently to keep the sauce from burning. Stop cooking when it reaches a consistency and flavor you like.

When is ready use a hand blender to whizz the sauce. You can add some more fresh basil leaves.

This fresh tomato sauce can be kept frozen for at least three months.
